When you read a RtB and you see a comment that you think couldn't possible have happened in the book (i.e. Ginny knowing something about Harry or something else), remember that there are huge gaps of time between books and chapters, sometimes even within the chapters. Some things could happen within that time frame.
I have gotten a few reviews saying "that never happened in the book" or "That could have NEVER happened......" But seriously, it could. We don't know what happened in those time jumps and J.K.Rowling left us to use it.

True, you never know what happens 'off-screen' (or rather, off-page). Of course, them knowing something without it being explicitly stated in the book wouldn't be completely canon, though sometimes pretty likely, but for fanfiction purposes, I don't see a problem with it. Actually, in some cases it might work pretty well to develop a story that fills out the gaps.

For things where Ginny/Ron/Hermione know things about Harry that aren't mentioned in the books, I usually tend to believe that they DON'T know those things as Harry sn't the type to tell people that much about himself (I think the first train ride with Ron is a bit different and nothing had happened to him yet and he's excited and is keen on making his new friend happy).
