I don't have the writing chops to pull this off, but it's a Plot Bunny too open to epic ficness to sit on it, so here it is shared for someone to run with it:
While Ron is an Auror after Rose is born but before Hugo is conceived, Ron becomes a Twilight style Vampire.
Consequently, Hugo is conceived, Hermione has to be changed to a Vampire as a consequence (even in spite of Wizarding medical ability) so we now have a family of Ron & Hermione Twilight Vampires but also possessing of wizarding/witch abilities (possibly enhanced ability, but not outrageously so, at least to begin with, being now immortal might open the possibility of prodigious power a century or two down the road), Rose the normal Witch, and Hugo the Wizard Hybrid.
For even more fun, Rose was born sooner, such that Rose & Hugo start Hogwarts at the same time.
