There are some lines in the series that really seemed to stand out. They may not be the same for everyone, but everyone has at least one.
One of my fav lines in the whole series is not even a quote but merely a thought.
" There was a brief silence in which the distant echo of Hagrid smashing down a wooden front door seemed to reverberate through the intervening years." (chap 3, deathly hallows)
I don't know why but that line ready shook new the first time I every read it.

Dumbledore's wisdom ( I miss him), his paroles really speak to me and move me.
"I am not worried, Harry," said Dumbledore, his voice a little stronger despite the freezing water. "I am with you."
"Of course we still want to know you!" Harry said, staring at Hagrid. "You don't think anything that Skeeter cow - sorry, Professor," he added quickly, looking at Dumbledore. "I have gone temporarily deaf and haven't any idea what you said, Harry," said Dumbledore, twiddling his thumbs and staring at the ceiling.

I know the movies aren't canon, but I liked some of the lines from the Sorcerer's/Philosopher's Stone movie than the book:
"Five points will be awarded to each of you. For sheer dumb luck."
"Now, I'm going to bed before either of you come up with a clever plan to get us all killed...or worse, expelled." (I liked how the line was delivered in the movie).

Hmmm... Most of what Ayrine Sun said too, I love Dumbledore's words of wisdom.

Yeah, I love a lot of Dumbledore's lines too. I particularly liked these from him:
"Numbing the pain for a while will make it worse when you finally feel it." "It is my belief... that the truth is generally preferable to lies." "Differences of habit and language are nothing at all if our aims are identical and our hearts are open."
Then I loved all of these:
"Mudblood, and proud of it!" - Hermione, DH. "Thoughts could leave deeper scarring than almost anything else." - Madam Pomfrey, OotP. "No, I think I'll just go down and have some pudding and wait for it all to turn up... It always does in the end." - Luna, OotP. "If you want to know what a man's like, take a good look at how he treats his inferiors, not his equals." - Sirius, GoF.

Dumdledores last line in the books: "Of course it is happening inside your head, Harry, but why on earth should that mean it is not real?" is really great and also a line that I think is only said in the movies by Kingsley "You may not like him Minister… but you cannot deny he's got style" but it is really delivered well.

That was a very common joke amongst my friends long before that book came out.
It's a stupid line but it's one that sticks in my head and always makes me laugh:
"Harry Potter was rapidly becoming obsessed with Draco Malfoy."
That way it's phrased like that makes it sound like he's got some kind of fangirl disease or something. I just get a picture of him turning rabid every time he sees Draco or fainting or glomping... or worse.

Ron is just lucky that Hermione was not in the class to hear it lol. Also i am kind of surprised that JKR's editors let her have that joke in the first place but i am not complaining as like i said it is a realistic joke for a teenage boy to make.

For some reason, one of my favorite lines of all time is completely random; in the first book when Harry's on the platform and sees Neville and his grandmother, and all you hear is:
"Oh, Neville!"
Makes me crack up just thinking about it, don't ask me why.
